Zwaardvis met lauw/warme tomatensalsa en olijven
Ingrediënten voor vier personen:
4 stukken zwaardvis a 200 g
2 el olijfolie
4 pomodori tomaten, gepliceerd (ontveld) zaad eruit en in blokjes
1 rode kleine ui, zo fijn mogelijk gesnipperd
10 zwarte olijven in ringetjes gesneden
10 blaadjes basilicum, fijngehakt
1/2 dl droge witte wijn
1/2 dl visbouillon
peper
zout
Bereidingswijze:
Verhit de olie en fruit het uitje aan voeg de olijven, tomatenblokjes toe +/- 1 min
Voeg de wijn en bouillon toe en laat het geheel aan de kook komen voeg de gehakte basilicum toe. Breng op smaak met peper en zout.
kwast de zwaardvis in met iets olijfolie grill ze in 3 tot 5 min gaar (halverwege om keren). Serveer als ze klaar zijn licht zouten en peperen. Serveer de zwaardvis samen met de tomatensalsa.
(zorg dat de zwaardvis op kamertemperatuur is !!!!)
